The Calliola world of food and flavours is dictated by the four seasons and nature’s produce. Our menus, which are designed by our top professionals consist of nature’s and local producers’ ingredients. They are prepared without any intermediaries, always fresh, directly onto the customer’s plate.
Game and mushrooms come from the surrounding woods, the fish is from the nearby waters, and the bread is baked from flour from Raseborg. The renowned Bovik organic lamb farm here in Snappertuna is our designated supplier. Even our honey is delivered from right next door – says our wizard in the kitchen, Chef Joachim Silfver.
Good relations with the local people and with the small producers in the surrounding area guarantee high-quality ingredients. The Calliola menu is designed by taking advantage of seasonal products. In actual fact, the menu forms a frame inside which the content varies on a daily basis. If the catch of the day has been perch, the fish will find their way to the lunch table via the kitchen. When making a table reservation, a customer can choose the main food ingredient, and it will be prepared with the available accompaniments.
Local food and genuine flavours combined with innovative creation are, indeed, the foundation of the Calliola kitchen. Before, people used to talk about home-cooked food. Now, the talk of the town is local or seasonal food. In principal they are one and the same. Game can also often be seen on the Calliola menu. If one does not know a person who hunts, it is not very often that one gets the chance to enjoy fresh game and ethically-generated food.
In addition to conferences and wedding receptions, we also cater to private customers and smaller groups (groups of at least 8 people) upon advance booking.
